Every great story begins with a meeting. Of people, minds, hearts, souls; life’s greatest changes take place when we are with others. The Spirit Selection exists thanks to meetings. Sociable, free from prejudice; it never tires of putting others first, dedicating body and soul. It is selfless, convinced that everyone it knows is a new world just waiting to be discovered. It is happy when it comes across someone different because it knows that diversity is a disguise for riches. Like Amaro and Tonic, when opposites meet and join forces, magic happens.
It was surprising for me to discover this place. I have loved grappa for a long time, but who imagined that I could work in a Distillery... and then in this Distillery?
I have been making macaroons for thirty-five years. I started when I was 18, just for fun, and I have never stopped. Pastry making continues to be my great passion today: taking ingredients, mixing them together, combining them and transforming them into something else, something with a precise shape and flavour, that you can hold in your hand, bite into, taste...this is what makes me happy. I love it when, during Cantine Aperte, people come by the bakery and I have the chance to explain what I do and how I do it. That's when people catch a glimpse of my world: and I welcome them with open arms.
I met Gianfranco and Simonetta when I was still working in the Maldives. They were staying in the holiday village where I worked as a bartender and we made friends, we talked and I told them that I would like to come to Italy; that was it, we applied for the residence permit and I came. When I arrived in Italy I met the rest of the family and, in all this time, never once have I felt like a stranger. I have always felt like one of the family. After a while, my wife and daughter, who was 13 months old at the time, came to join me; and in all these years we have never felt like foreigners.
You need a lot of passion to do this job. I can't even consider it as a job: it has to be a part of your life. This is fundamental because, when you relate to people, you are contributing, together with the kitchen and the location, in some way to creating their evening. You never know who is standing in front of you, or why they are here: they might be celebrating an important event or anniversary, or need to be consoled. Either way, the people who are here come because they want to feel good. What I do is make that wishes come true.
I see working in the kitchen as teamwork: everyone has their own job to do, and everything happens precisely and on time. During service, time is short and every second counts. Every dish goes out at a specific time because guests can't be expected to wait. You have to know each other well and work together to ensure that everything runs smoothly. The team is also there to help you and support you when things go wrong. In this business, you never what's going to happen and if you're part of a good team, you just deal with the incident and start again, saving the evening.
