Orange Is The New Di Nero

A burst of energy mellowed with the sweet tones of carrot foam and the light spiciness of ginger;

  • Di Nero – crema caffè 15 ml
  • Orange and ginger liqueur25 ml
  • Lime 10 ml
  • Lemon soda top
  • Carrot foam to the rim of the glass
For the Carrot Foam:
  • Carrot juice 100 ml
  • Egg white 50 ml
  • Citric acid 1 gram

Build the drink directly in the glass using the BUILT OVER ICE technique, as opposed to the foam, which must first be built in the siphon (insert all the ingredients given in the recipe, shake the siphon and load with a nitrous oxide charge to complete the drink)
