Panettone Glassato Piemonte
The idea of making Panettone, to complete the range of macaroons created by Moriondo Carlo, was put into practice when the production unit moved from its historical premises in Via Saracco to Distillerie Berta. It was during the move that we found an old recipe belonging to Francesco Moriondo, dating back to when he worked at the Royal Court for the king.
Our pastry chef studied the recipe and faithfully reproduced it in its traditional version: Piedmontese Panettone, naturally leavened with mother yeast and enriched with raisins and candied fruit (lemon, citron and orange), coated with a crunchy P.G.I. Piedmont hazelnut glaze with a scattering of almonds and sugar.

Ingredients: wheat flour, raisins, hazelnut glaze (117°) [sugar, egg white, powdered sugar (wheat), rice flour, sunflower oil, hazelnut cream (1%)], butter, sugar, water, candied orange peel (orange peel, glucose-fructose syrup, sugar, acidity regulator: citric acid), egg yolk, emulsifier: mono and diglycerides of fatty acids, natural yeast (wheat flour, water), glucose-fructose syrup, granulated sugar, chopped hazelnuts, almonds (1%), salt, natural flavors.
